We all know that the cream tea is one of the many great things about coming to Devon, but just because Devon is closed off during the country’s lock down, doesn’t mean you don’t have to miss out on enjoying this tasty treat! You can easily make your own cream tea to enjoy in your garden, in your living room or just in your kitchen.
Not only does this recipe only take around 20 minutes to make, but many of the ingredients can be found in your kitchen cupboards, so you can easily rustle these up whenever you like!
300g self raising flour
¼ tsp salt
1 tsp baking powder
85g butter
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
Juice of one lemon
1 egg
Start by heating the oven to 220 degrees and in a large bowl, add the flour, salt and baking powder. Stir until all mixed in together and then cut the butter into cubes.
Add the cubes to the flour mix and rub together with your fingers (make sure your hands are clean!) until the mix resembles bread crumbs. Stir in the sugar.
Pour the milk into a microwavable jug and then heat for about 30 seconds, you want it warm, but not hot. Once warm, add the vanilla extract and the lemon, give it a stir and set to the side.
Make a well in the middle of the dry mix and pour the liquid in stirring it with a metal knife until it starts to come together. Sprinkle some flour onto a clean surface and tip the dough out to work with your hands. Fold it over itself until it is smooth.
With a cutter, or the edge of a glass, create individual circular pieces of dough, keep going until all the dough is used up.
Beat an egg and brush over the top of each scone, then place in the oven for around 10 minutes until risen and golden.
You can now decide whether you want to eat the warm (we recommend this!) or let them cool to eat later – you can even freeze these if you like, just remember to fully defrost them and put them in the oven for a few minutes before eating them.
If you do choose to eat them now, all you need is to stick the kettle on and make a nice cup of tea and then serve with clotted cream and jam – just remember to put your jam and cream the right way round for a real taste of Devon!
