South West Restaurant of the Year 2007

Tim Bouget brings his classical training with the Roux brothers at the 3 star Michelin Waterside Inn and Gaultiero Marchesi in London to this intimate 24 seat restaurant ODE in the estuary village of Shaldon.

Tim opened ODE with his wife Clare on returning to Devon having held senior positions for 12 years at boutique hotels in Africa, Asia, Caribbean, Middle East and USA, including the famous Sandy Lane Hotel in Barbados and Begawan Giri in Bali.

The frequently changing menu features fine regional and seasonal cuisine with influences from around the World.

Food

We believe in true food values and are passionate about sourcing only the finest of seasonal raw ingredients, from regional beef, line caught fish to organic fruit and vegetables. We serve innovative cuisine with a healthy twist using flavours from around the world. We always strive for perfection and do not compromise on quality. Our signature dishes remain but ingredients may be refined, a subtle change in spicing, cooking technique or mood. Each dish is individually balanced in flavour and composition by the chef, however for people who enjoy additional vegetables and potatoes we offer a range of seasonal side dishes.

Wine

We demand the finest produce and only source from organic estates. Grapes from our chosen estates are grown without chemical pesticides and fertilizers promoting bio diversity and sustainability. Our wines are mainly younger varieties as the low tannins work well with our style of cuisine. Food and wine pairing is about balance, an attempt to marry flavours, textures and aromas, the perfect pairing is when the two deliver a level of contrast that neither could achieve alone. All our beverages are organic

Our team are proud to announce that we have been awarded the only gold in the restaurant category for Taste of the west 2007 and also went on to be awarded South West Restaurant of the Year 2007. These awards represent the very finest of retail and hospitality in the South west. We also continue to be one of only a handful of restaurants in the South West to be certified organic by the Soil Association.
